Off-hand refers to non-weapons equipped in second weapon slot. All classes can equip a shield in that slot, and some classes can dual-wield one-handed weapons. There are some special class-specific items as well, though.
- Barbarian: None, though Barbs can dual wield most one-handed weapons, including Mighty weapons.
- Crusader: Crusader shields. Or regular shields, though only Crusaders can equip Crusader shields.
- Demon Hunter: Quivers can be equipped with any type of bow or xbow.
- Monk: None, though Monks can dual wield most one-handed weapons, including Fist weapons.
- Witch Doctor: Mojos.
- Wizard: Sources.
